These Mediterranean Roll-ups are perfect for your dorm! Whip them up in no-time, so you can get back to your busy schedule. You only need a few ingredients and minimal equipment. They’re fresh, crisp, and so filling. Load each wrap with these vibrant Mediterranean flavors including a creamy and sharp feta cheese spread, bright kalamata olives, and biting red onion, balanced with salty and savory prosciutto and salami, and wrapped in a crunchy romaine leaf. Enjoy two lettuce wraps for a light lunch with your roommate, or eat all four to stay fueled and satiated for the rest of the afternoon.

INGREDIENTS:

  • 4 romaine lettuce leaves
  • 12 kalamata olives, pitted
  • 2 oz prosciutto
  • 2 oz salami
  • ÂĽ cup red onion, diced
  • 1/2 cup feta cheese
  • 2 tbsp olive oil
  • 1 tsp dried basil leaves
 

DIRECTIONS:

  1. Combine olive oil, basil leaves, and feta in a bowl and smash with a spoon until a cohesive spread forms.
  2. Assemble lettuce wraps by topping with feta spread, olives, red onion, prosciutto, and salami.

Storage: Consume right away! Or store ingredients separately and assemble when you’re ready to eat.
