Turkey Meatballs and Cauliflower Mash

That’s why I’m transforming some serious comfort food into a low-carb, keto-friendly dish. Each meatball brings layers of flavor from the fresh and zippy parsley to the earthy tones of sage and mouth wateringly savory caramelized onions. Accompanied by a cauliflower mash that is so smooth, rich, and creamy that you won’t even believe it’s cauliflower. Both of these keto-friendly dishes will satisfy your taste buds and your appetite. Turkey Meatballs

Prep Time: 10 minutes

Cook Time: 20 minutes

Total Time: 30 minutes

Serves: 4 (3 meatballs, 1/2 c. cauliflower mash)

Ingredients:

Meatballs:

  • 1lb 93/7 Ground Turkey

  • 1 large egg

  • ¼ cup sweet yellow onion

  • 1 Tbsp fresh sage
  • 3 Tbsp fresh parsley
  • 2 Tbsp almond flour
  • 1 tsp salt
  • ½ tsp pepper

Cauliflower Mash:

  • 16 oz riced cauliflower

  • 3 Tbsp butter

  • 2 oz cream cheese

  • 1 Tbsp heavy cream
  • ½ oz fresh chives
  • 1 tsp salt
  • 1 tsp pepper

Allergens: Dairy, Eggs, Almonds

Directions:

Meatballs: 

  • 1Prep meatball mix-ins by dicing yellow onion, and chopping sage and parsley
  • 2In a large bowl, combine all ingredients and mix by hand or with a spoon until a homogenous mixture forms
  • 3Form balls by hand into 12 evenly-sized meatballs, should be roughly ¼ cup of mixture each
  • 4Preheat large saucepan with butter over medium heat
  • 5Pan fry meatballs, turning every 3-4 minutes until meatballs are browned on all sides, and they are fully cooked (center should reach 165 degrees Fahrenheit)
Cauliflower Mash
  • 1Add cauliflower rice and ¼ cup water to a non-stick saucepan, cover, and steam over medium-low heat for 5-6 minutes, or until cauliflower is tender
  • 2While cauliflower is steaming, prepare chives by chopping them
  • 3Once cauliflower is tender, add it to a high-powered blender or food processor and blend until cauliflower is smooth
  • 4Remove cauliflower from blender and place in a large bowl
  • 5Add in remaining ingredients and whip with a stand mixer or hand mixer until all ingredients form a creamy, homogeneous mixture
