Grilled Broccoli with Cherry Tomatoes 🥦🍅

As a registered dietitian nutritionist and chef, I love converting people from “My mom used to make me choke down that boiled vegetable,” to “Whoa, I never knew that vegetable could taste so good!”

Roasted Brussels sprouts came first. And now roasted and grilled broccoli is the new darling of vegetable evangelists. And it is so easy to grill broccoli alongside your favorite meat, whether it be a hamburger, shrimp, or salmon. The key is to get your grill nice and hot first. Then put the broccoli on the grill. It’s the caramelization and charring that intensifies and concentrates the flavors of the broccoli into new profiles. Here’s how you do it.

Grilled Broccoli with Cherry Tomatoes

Prep Time: 5 minutes

Cook Time: 10 minutes

Serves: 4

Ingredients:

  • 2 tablespoons neutral high-heat oil, like avocado or canola oil
  • 1 pound broccoli crowns (i.e. with the long stem cut off)
  • 1/4 teaspoon salt
  • 12 cherry tomatoes
  • Freshly ground black pepper
  • 4 lemon wedges
  • Optional: extra-virgin olive oil for drizzling

    Directions:

    • 1Soak a long wooden skewer in water.
    • 2Preheat grill to medium-high heat, about 500-525 degrees F.
    • 3If you have a grill basket, you may cut the broccoli into florets for faster cooking. If you do not have a grill basket, cut the broccoli crowns through the stems into thirds or fourths, turning them into “steaks” that you can easily flip.
    • 4Skewer the tomatoes. Drizzle the broccoli with oil and sprinkle with salt.
    • 5To cook without a grill basket: Cut the broccoli crowns through the stems into thirds or fourths, turning them into “steaks” that you can easily flip. Fold a paper towel into a small square and coat in oil. Using tongs, grease the grill grates. Place the broccoli steaks on the grill with the flattest sides down first and cook until it has grill marks, about 5 minutes. Grill a few more minutes until fork tender, about 4 minutes.
    • 6To cook with a grill basket: Cut the broccoli into florets for faster cooking. Place the broccoli florets in the basket and arrange in a single layer and up the sides of the basket. After the broccoli chars lightly and evenly on the bottoms, stir occasionally and cook until fork tender, a few more minutes.
    • 7Turn the broccoli until it has grill marks, about 5 minutes. Grill a few more minutes until fork tender, about 4 minutes.
    • 8Sprinkle with pepper and spritz on lemon juice. If desired, drizzle with extra-virgin olive oil or additional flavor.
