Cheesy Spinach Jalapeño Baked Eggs

Thanks to the jalapenos, this savory dish has a spicy kick, but it's balanced out by the creaminess of the cheddar and avocado

Cheesy Spinach Jalapeño Baked Eggs

Ingredients:

  • 1 tablespoon extra virgin olive oil
  • 1 cup loosely-packed spinach leaves
  • 1 small jalapeno (half finely diced, the other half sliced for garnish)
  • 2 eggs
  • 1/4 cup shredded white cheddar cheese
  • 1/2 avocado, sliced

Keto Breakfast Low Carb Cheesy Jalapeno Eggs

Directions:

  • 1Preheat oven to 425 degrees.
  • 2In a small, oven-safe pan or cast iron skillet, heat up olive oil on medium-low heat. Add spinach leaves and diced jalapeño, and saute for 1-2 minutes, stirring frequently, until spinach just begins to wilt. Remove from heat.
  • 3Create 2 divots in the pan, and crack the eggs into them. Top with shredded cheddar cheese, and bake for about 7-8 minutes until the whites have set, but the yolks are still slightly runny. Top with jalapeño slices and avocado slices. Serve warm.
