Keto Shepherd’s Pie

INGREDIENTS
- 2 tablespoons olive oil
- 2 pounds ground beef
- 1 cup onion, diced
- 1 cup carrot, diced
- 1 cup celery, diced
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 teaspoon dried thyme
- 1 tablespoon Worcestershire sauce
- ½ cup water
- ¼ cup parsley, chopped
Cauliflower puree:
- 6 cups cauliflower, cooked until tender
- 4 cloves garlic
- 6 tablespoons butter
- ¼ cup heavy cream
- ½ cup shredded cheddar cheese
- 1 teaspoon salt
- ½ teaspoon pepper
- ½ teaspoon onion powder

DIRECTIONS
- Preheat oven to 350 degrees F.
- In a 12 inch cast iron skillet, heat oil over medium heat and brown ground beef until fully cooked.
- Add onion, carrot, celery, garlic, seasonings, Worcestershire, ½ cup water, and cover and simmer for 10 minutes.
- While that is cooking, make the cauliflower puree by combining cauliflower, garlic, butter, heavy cream, cheese, salt, pepper, and onion powder in a food processor and process until smooth.
- When the beef mixture is finished simmering, uncover and top with cauliflower puree. (if you’re not using an oven-safe skillet, transfer beef mixture to a 9x13 baking dish and top with cauliflower puree).
- Bake for 20-25 minutes, sprinkle with parsley and serve.
