Preheat the oven to 400° F. Line a large baking sheet with parchment paper.
In a small bowl, beat the egg. In a separate bowl combine the almond flour, coconut flour, and spices.
Dip each chicken tender into the egg then dredge through the flour mixture. Place on the baking sheet and repeat with remaining tenders. Spray with cooking spray then transfer to the oven. Bake for 35 minutes flipping once halfway through.
To make the chaffles, mix the eggs and cheese together in a medium bowl. Preheat a mini waffle maker. When the waffle maker is ready place ⅛ of the mixture into the waffle maker and cook 1-2 minutes until the waffle easily releases.
Serve the chaffles with the chicken and the keto maple syrup.
